Homemade Vanilla Infused Granola

 Vanilla-Infused Granola (250g Oats Base)

Dry Ingredients:

  • 250g old-fashioned rolled oats
  • 60g chopped nuts (e.g., almonds, pecans, or cashews) i used a mix of cashews, almonds, and macadamia
  • 30g seeds (e.g., pumpkin or sunflower)
  • ½ tsp fine sea salt
  • ½ tsp ground cinnamon (optional but cozy)

Wet Ingredients:

  • 60ml coconut oil or butter
  • 60ml honey or maple syrup
  • 1 tsp Plus 1 Desserts vanilla extract or paste

Optional Add-Ins (after baking):

  • 40g dried fruit (cranberries, raisins, chopped apricots)
  • 30g dark chocolate chips or toasted coconut flakes

🔥 Instructions:

  1. Preheat oven to 175°C (350°F). Line a baking tray with parchment paper.
  2. In a large bowl, mix oats, nuts, seeds, salt, and cinnamon.
  3. In a small saucepan, gently warm oil, honey/maple syrup, and vanilla until just melted.
  4. Pour wet mixture over dry ingredients and stir until evenly coated.
  5. Spread onto tray in an even layer. Bake for 20–25 minutes, stirring halfway.
  6. If adding dried fruits add them as soon as they are out of the oven  or cool completely if adding chocolate. Store in an airtight container.
