Nairobi Style Biscoff Cookies
Ingredients (Metric)
– 187 g all-purpose flour
– 63 g whole wheat flour
– 5 g baking powder
– 2 g baking soda
– 4 g speculaas spice mix
– 2 g salt
– 115 g unsalted butter (softened)
– 100 g white granulated sugar
– 30 g molasses (dark or light)
– 5 ml vanilla extract
– 30 ml milk
– Optional: 5 g dried orange zest, 2 g vanilla powder
substitute the vanilla extract and vanilla powder with 7gms vanilla paste
Instructions
1. Mix dry ingredients: Combine flours, baking powder, baking soda, salt, and spice mix.
2. Cream butter & sugar: Beat butter and white sugar until fluffy. Add molasses, vanilla extract, and milk.
3. Combine: Stir in dry mix until dough forms. Chill for 1 hour.
4. Shape: Roll to 6 mm thickness. Cut or mold as desired.
5. Bake: 165°C for 15–18 minutes until golden and crisp.
